Happiness and Hunger

In Gretchen Rubin's Happiness Project, she often advises against letting yourself get too hungry. I have to agree and I think this is especially true for women. Even Tim's grandmother, who is possibly the sweetest woman alive get's a little persnickety when she hasn't had her mid-morning snack. If you know me, you know I love talking about food and love any chance to incorporate a recipe into a blog post.

If you are a good, southern, church-going woman, you probably have a variation of Poppy Seed Chicken Casserole. That's not to say if you don't you're not good, southern or church going, but we need to remedy this immediately. Poppy Seed Chicken is one of the easiest, and possibly the yummiest casseroles ever.

Ingredients:


4 to 5 boneless, skinless chicken breasts cooked and shredded into pieces (you can poach, boil, or slow cook the chicken. Recently I've been doing it in a slow cooker in water, garlic, and onion powder. - SO easy and it makes the chicken super tender)

1 stick melted butter

1 (or 2!) sleeves ritz crackers broken into crumbs (you can do this by hand or with a food processor if you want to get fancy)

3 tablespoons poppy seeds

1 can cream of chicken soup

1 can cream of mushroom soup

1 8 oz container sour cream


Directions:


Preheat Oven to 350. Mix shredded chicken, soups, sour cream and 2 tablespoons poppy seed into large mixing bowl. Pour in 9X13 baking pan. For topping: In a separate bowl break up ritz crackers and mix in melted butter and remaining tablespoon on poppy seed. Top casserole with topping. Bake for 20-25 minutes until crisp and bubbly. Enjoy!
