Follow Up

So here's a brief synopsis of last weeks meals:

Tuna Melts: These little "sammys" were quick and EASY! That was my favorite part. They were delicious too!

Moroccan Style Talapia - I've pretty much decided that mango mixed with Cilantro is a perfect topping for anything. This was also fast, easy and yummy. Tim made this one.

Pork Tenderloin and Meredith's Veggies - Tim ended up getting a pork tenderloin that wasn't pre marinated, which I wasn't happy about, but I slathered it in plain old brown spicy mustard over night and it was SO good. The veggies were a nice touch too.


Slow Cooker Chipolte Lime Chicken with Jamaican Rice and Peas - This meals actually took more prep than any of them. However, since it's a slow cooker meal, there's not much to do when you get home except for make the rice. I did the prep the night before and it took about 10 minutes. The rice takes about 5 minutes. Not bad. There's tons of flavor in in this meal. Let me tell you - DON'T skip the rice in this meal if you decide to try it. It was awesome. You cook it with coconut milk and add red beans and scallions...oh my goodness. So good.

Spicy Pesto Pasta and Asparagus and Melon Salad - this meal I ended up making last Saturday but never got to give you my feed back on it. It was good, but probably more trouble that it was worth. I made a HUGE mess in the kitchen and felt like I had been slaving away. On foodnetwork.com they classify this meal as easy which is a crock of crap. It took way to much time for a weeknight so I'm glad I did it on a weekend. I was kind of disappointed in the spicy pesto pasta too...didn't meet my expectations. However, I will say the asapragus melon salad ROCKED. Sounded so weird, but the cantalope doused in lemon juice with fresh mozerella....YUUUMM. I normally don't like cantelope, but the lemon really kicked it up a notch. I think I might add lemon juice next time I have it.
