Since I'm all about good food lately, I thought I'd let you in on my Mother's Day Menu for this Sunday. Sunday is a special day for me as it will be my first Mother's Day as a Mother. My mom, and my two grandmother's will be coming over to my house for a late lunch and I can't wait to serve up what's on the menu...are you ready for it??? Tim says is a very girly meal, so I figure it's perfect! Recipes for my own concoctions are below. Here is it is:
Bacon and Swiss Quiche (for recipe, click HERE)
Standard Ceasar Salad
Heather's Warm Potato Salad
Heather's Light and Luscious Mocha Shakes
Heather's Warm Potato Salad - Take about 6 or 7 small red potatoes (do not peel) and dice into squares. Boil in Chicken Stock for about 10 minutes, or until potatoes are fork tender. Drain potatoes and add 1/4 cup olive oil, about 3 tbsp vinager, dash of salt and pepper, about 4 tbsp lemon juice, dash of lemon zest to season. Chop up one bunch fresh chives and stir into potatoes. Serve up warm.
Heather's Light and Luscious Mocha Shakes - For about 4 serving, put 4 cups vanilla frozen yogurt, 1/4 cup chocolate syrup, 2 tbsp espresso powder (you can find this at Fresh Market or specialty grocery stores. If you don't want to make the trip use instant coffee), and 3/4 cup milk, or more for your desired consistency. Blend in blender until smooth and serve. YUM YUM!!!
