Tasty Tuesday

Tomorrow is Tuesday, so I thought I'd get a head start on things. Today is memorial day, and we're having an impromptu get together with our good friends, the Eders. The Eders currently have 5 dogs and 2 cats at their house due to some pet sitting duties. I'm sure Savannah will be amused. So our responsibility is the appetizer, and the dessert. I had a hankering for an old fashioned sour cream pound cake. I've also recently discovered that I love all variations of corn dip, so I thought I'd make that for the appetizer. Below are the recipe for the creations I decided upon.

Old Fashioned Pound Cake - for recipe, click HERE

Spicy Corn Dip - for recipe, click HERE (I altered this recipe a bit; I used low fat sour cream and light mayo. I also used a small fraction of the mayo that it called for. I'm not a big mayo person) ALSO - I added ranch seasoning mix to this. This is a MUST! Gives it that extra zip!

On a personal note, say some prayers for me next week. Tim is out of town all week on a business trip. I'm not really looking forward to working full time while having 100% of the Savannah duties, although I'm sure I will have a deepened appreciation for single mothers! I really don't know how they do it!

We are having dinner with neighbors, too! I love holidays for that. :) I am totally with you re: wondering how single moms do it...J has had to work late the past three nights or so and I am WORN OUT. Oh, and he's pretty tired, too. :)
