
There are many reasons to love Spring. Fresh Air, Daylight Savings Time, warmer temps, lower utility bills, and the fresh produce are some of my favorites. There's just something about that fresh air and change in temperature that makes me want to get out and get my life together! I feel like it's easier to eat healthier once Spring rolls around. The fresh produce selection is much better, and the holidays and all the bad food choices that come with it seem out of reach. Which brings me to grilling. We just recently started to indulge in the pleasure of grilling. There's something about sitting outside on your porch, sipping a fruity drink, and watching the kids play while some grub sizzles on the grill that feels heavenly. The house where we live now is much more grill-friendly, so we are just now starting to realize the joys of grilling.
So I ask you...what is your favorite thing to grill? Please share any of your favorite recipes!

fresh wild caught Alaskan sockeye salmon...squeeze the juice of a lemon over it, wrap in foil and throw on the grill...serve with asparagus on the grill. wrap in foil, throw a few pats of butter or EVOO and balsamic vinegar and season of preference (mine is Mrs Dash table blend), wrap it up, throw on next to the salmon....YUMMMM!
Hey! One of our fav grill recipes is smoked salmon. We brine it for several hours in a mix of water, salt, brown sugar and a few bay leaves. Then we smoke it on the grill for an hour or so with applewood chips. Because of the time involved, it's something to cook on the weekend, but it's seriously the BEST tasting salmon I've ever eaten! We do this when have people over, and cook a whole side of salmon. It's so simply, but has so much flavor.
